Roshni and her husband are hoteliers, which means they have hospitality in their blood. Roshni is passionate about cooking and baking, especially about introducing the depth and flavor of traditional Syrian Christian food to travelers. In her contemporary Ernakulam apartment with a beautiful view of the Kerala backwaters, Roshni offers guests dishes such as a mouth-watering fish curry, karimeen pollichathu (marinated fish grilled in banana leaves), succulent mutton stew, and perfectly cooked fresh vegetables (her verdant green beans with freshly grated coconut and beta-carotene drenched tapioca are so amazing, they may supplant the meat dish as your favorite). If you book the cooking experience, Roshni will demonstrate to guests how to prepare two or three traditional Christian Kerala dishes, as well as how to pour appams, a pillowy South Indian rice-flour pancake. Once the meal is ready, join her husband George for a meal that also includes dishes she prepared in advance. Please note that as with many Indian families Roshni also has kitchen staff help with the cooking and meal preparation, who may be present in the kitchen during the experience. She also may not sit with guests at the table, preferring instead to be ferrying fresh dishes from the kitchen to ensure every dish comes out hot. Guests will sit at her dining table and enjoy their meal with Roshni's wonderful husband George.
